BAK_HuffingtonPost_blog.pngAs one of the nation’s largest string cheese manufacturers, we are accustomed to answering a lot of questions about cheese. We were recently asked by a leading international news media outlet to answer this simple question:

What is the real difference between string cheese and mozzarella cheese?

In an interview with The Huffington Post, Brian Baker, president of Baker Cheese, answered this question and talked about what makes string cheese stringy. Read the full interview, by clicking here.

What Makes String Cheese, Stringy?

You might be surprised to learn that the cheese making process is the key factor in the creation of your favorite stringy cheese. The stringiness of string cheese is naturally created by the cheese being stretched and pulled by an auger while simultaneously being  heated to 140 degrees. At this temperature, the milk proteins begin to move and change, aligning horizontally. This alignment allows the milk proteins to become stretchy.

What Is the Difference Between String Cheese and Mozzarella Cheese?

The answer: string cheese must always be mozzarella cheese. Why? Because mozarella cheese is the only type of cheese that has a stringing quality, naturally. Snack cheese, on the other hand, can be any variety of cheese, from cheddar to muenster, but you won’t be able to pull it apart in strands.
